Lemon Rice

Ingredients

1 cup raw Rice

1 lemon
1 Tablespoon oil
3 to 4 green chillies
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
pinch of asafoetida
1/4th cup peanuts/cashew nuts
1/2 teaspoon turmeric powder
1/2 teaspoon Fenugreek seeds (dry roast and make a powder)

curry leaves
salt to taste

Method

1) Pressure cook the rice and cool and keep aside

2) Heal oil, splutter mustard seeds and cumin seeds, add asafoetida, peanuts, turmeric powder and fry until they turn brown

3) Add green chillies, curry leaves,Fenugreek powder and salt and turn off the flame and add lemon juice finally and mix with rice.
